Our story begins in the 1960s in Madrid with Natalio Pérez Jara, founder of Cala Millor Madrid and a pastry chef by vocation. Before his recent passing, Natalio had the chance to visit and inaugurate the new “window” opened in Miami for the United States, extending his legacy across the Atlantic.
In 1978, the first official version of the iconic Cala Millor pastry shop opened its doors on Fermín Caballero Street, in what was then known as the City of Journalists. From that moment on, a tradition of excellence, passion, and craftsmanship began to take shape, one that continues to inspire today.
The Family History

“I come from a family where baking was never just a profession, it was a legacy.
My grandparents, Natalio and Concepción, invested everything they had into opening a small bakery in Spain during the 1960s, after my grandfather trained as a pastry chef in Mallorca.
With passion, discipline, and a commitment to craft, they built the foundation of what would later become one of Spain’s most respected bakeries.
My father, José, continued that journey, elevating the family business and transforming it into a reference point for quality and tradition.
I grew up watching their dedication, understanding that each recipe carried a piece of our story.
Bringing Cala Millor to Miami was my way of honoring that legacy, three generations of artisans whose love for authentic Spanish cuisine deserved to cross the Atlantic and find a new home.”
The bakery experience




The bakery is, if not the best, certainly one of the best in Miami, capable of competing in quality and authenticity with any other bakery that dares to challenge it.
What is the secret?
At Cala Millor, they make each of their products every day using natural, fresh ingredients.
What’s more, they haven’t changed their recipes; they are the original ones, handed down from their family.
Their specialty is cakes, but they also make other types of seasonal pastries and even adapt to very specific dates. As we will see, Cala Millor boasts one of the best roscones de reyes (Three Kings’ cakes) in the city of Miami.

At Cala Millor Miami, cakes are more than desserts, they are a living testament to a family legacy that began in Spain over sixty years ago. Every day, the pastry team prepares between eight and ten varieties, all based on the original recipes created by founder Natalio Pérez Jara, whose craftsmanship shaped the identity of the historic Cala Millor pastry shop in Madrid.
The selection reflects both tradition and cultural heritage. Among the most emblematic offerings is the Tarta de Santiago, a classic almond-based Galician recipe, and the delicate Basque Cheesecake, known for its creamy center and caramelized exterior.
The iconic Black Forest Cake and the elegant Chocolate Textures Cake highlight the founder’s mastery of European pastry techniques.
Freshness and seasonality also play a role. Daily favorites include Lemon Pie, Carrot Cake, Fruit and Puff Pastry Tart, and the beloved Ensaimada Filled Cake, honoring Mallorca’s famous sweet bread.
Seasonal creations mark special moments of the year: Pecan Pie and Pumpkin Pie for Thanksgiving; the traditional Yule Log (Tronco de Navidad) in December; and the cherished Roscón de Reyes, crafted only during the Christmas season.
Each cake is handmade, using natural ingredients and time-honored methods. In a fast-paced city, Cala Millor continues to celebrate the art of true pastry.
Spanish cuisine and the Executive Menu
The Cala Millor executive menu in Miami consists of:
- Available Monday through Friday, from 11:00 a.m. to 4:00 p.m. (except holidays).
- Approximate price: US $35 per person.
It consists of three courses:
- Appetizer with several options (e.g., house salad).
- Main course with a selection of dishes such as salmon with vegetables or potatoes.
- Dessert or soup/cream soup depending on the selection of the month.
Understanding the Cocktail Experiences at Cala Millor Miami
Cala Millor Miami has introduced a series of cocktail experiences that reflect a broader shift in hospitality: the desire to connect mixology with cultural identity. A central feature of these experiences is the use of premium spirits, such as The Macallan 12 Double Cask, presented in tasting-style formats accompanied by carefully selected foods — 5 Jotas Iberian ham, aged Manchego cheese, or artisanal chocolate. The bar also incorporates Spanish elements into classic cocktails, introducing touches like Albariño wine or Mediterranean botanicals. This reflects Cala Millor’s broader philosophy: reinterpreting Spanish gastronomy through a modern, thoughtful approach.

The Tradition of Roscón de Reyes and Homemade Turrón at Cala Millor.
Every December, Cala Millor Miami revives two of the most cherished holiday traditions in the Spanish-speaking world: the Roscón de Reyes and handcrafted turrón. For Spanish and Latin Catholic families, these sweets are far more than seasonal desserts, they are symbols of celebration, faith, and cultural continuity.
The Roscón de Reyes, traditionally enjoyed on January 6th, honors the Day of the Three Kings. Its origins date back to ancient Roman festivities and later became a beloved Christian tradition across Spain and Latin America. At Cala Millor, each roscón is made by hand using the original family recipe, developed over three generations. The result is a fragrant, tender, slow fermented brioche filled with cream or custard and decorated with candied fruits that evoke the jewels of the Magi.
The restaurant will begin accepting pre-orders starting in December, but demand is expected to exceed last year’s record. Those who want a roscón for their family celebration should reserve as early as possible.
Equally special is Cala Millor’s homemade turrón, crafted on-site with traditional Spanish techniques, using almonds, honey, and natural ingredients. Its superior quality lies in its simplicity: no shortcuts, no additives, just authentic craftsmanship.
